Herbe de Provençe


Herbes de Provençe, or Provençal herbs, is a traditional blend of aromatic herbs that flourish in hills of southern France during the hot summer months.
Used by the handful when fresh, Herbes de Proveneç is also good using dried herbs. Bay leaf, thyme, fennel, rosemary, chervil, oregano, summer savory, tarragon, mint, and marjoram are some of the herbs typically used. Orange zest is sometimes included as is lavender, though the lavender is less traditional and was added more for the benefit of tourists who saw lavender fields as almost emblematic of the Provençe region.
Traditional or not, the addition of lavender is an nice addition to the blend.
Herbes de Provence is often sold in traditional terracotta jars which make both a charming gift and effective storage container.
  • 1 TBS thyme
  • 1 TBS chervil
  • 1 TBS rosemary
  • 1 TBS summer savory
  • 1 TBS lavender
  • 1tsp tarragon
  • 1 tsp marjoram
  • 1/2 tsp oregano
  • 1/2 tsp mint
  • 2 powdered or chopped bay leaves

  1. Put the bay leaves in a coffee grinder to grind.
  2. Mix together all of the ingredients and store in a tightly sealed container.
Makes about 1/3 cup herb mix.

Trick: Excellent in everything; in sauces, baked goods, rubs on meats, pizza topping, salad/soup seasoning, potato bakes, home cheese making, etc.
