15 Minute North African Inspired Creamy Tomato Tortellini Soup

Welcome Spring! We've enjoyed really nice sunny weather here in Algeria for most of the winter, but it seems today the offical first day of spring, winter is fighting back. So we're in for a few cooler days on the weekend. My weekend is going to be really busy as I'm planning to take my children to Jardin D'essai in Algiers. 


Jardin D'essai Alger is really one of the real hidden gems of Alger. It's located in the Hamma district of Algiers, the capital of Algeria. It's a lush garden which exsists into an amphitheater at the food National Museum of Fine Arts of Algiers on the rue Mohamed Belouizdad and Hassiba Ben Bouali near the Algiers metro.
Established in 1832, it is considered one of the largest botanical gardens in the world.The garden sits on an area of 58 hectares (38 acres of gardens and 20 acres of arboretum). The garden was the brainchild of , General Antoine Avisard and civil intendant Pierre Genty De Bussy. In 1900 a zoological garden was created by Dr. Joseph Angel.In 1918 , the School of Horticulture and Agricultural School housewife implanted inside the garden.
In 1930, a zoo was established that hosted aquatic birds, monkeys, lions, panthers, but also livestock barnyard Two years later, a part of the movie Tarzan the Ape Man with Johnny Weissmuller was filmed at this legendary park and was regarded at the time as the best North African zoo. 
From 2001 to 2009, the garden is closed due to work; But reopened in May 2009, it now houses the offices of the National Institute of Agronomic Research of Algeria. There are 2 main gardens: The French and English gardens and Jardin D'essai is home to over 1,300 species of exotic plants.
Visiting this garden is enjoyable both in the winter on the days when it isn't raining but also wonderful break from the hot and humid summmer. The temperature never reaches more than 25°C in the summer. You can easily make a day out of exploring the gardens and visiting the zoo. We love to take a picnic and enjoy it under the ancient whining trees.


I've been busy getting ready for our packed weekend, I didn't have much time to spend in the kitchen. Looking at the clock at 11 o'clock I headed off to the kitchen to throw something together. I found few simple ingredients I had in my fridge and pantry, including a small bag of store-bought 3 cheese tortellini and whipped this super-easy and quick nourishing soup. It all came together in just about 15 minutes, yup just 15 minutes. I've added a teaspoon of the North African spice mix Ras el Hanout and harissa for an extra layer of flavor interest. This soup cooks just as fast as opening one of those canned soup, but way more tasty and better for you! It was a silky smooth yet hearty fast lunch. Easy enough for busy weekday lunches and even portable for when you're out and about.

{ 15 Minute north african inspired CREAMYTomato Tortellini Soup }

kick up your weekday lunch with this super-fast 15 minute north african inspired tomato soup with TORTELLINI  

YIELD: serves 4
ACTIVE PREP TIME: 5 mins 
INACTIVE PREP TIME: 0 mins
COOK TIME: 15 mins

  • 1 small onion, finely grated
  • 2 TBS unbleached all-purpose flour
  • 4 liter/quart water or chicken stock
  • 2 cloves of garlic, finely minced
  • 250g - 1 cup passata/tomato sauce 
  • 1 bay leaf 
  • 1 tsp Ras el Hanout (optional) 
  • ¼ tsp dried Italian herbs or Herbes de Provençe
  • pinch of black pepper
  • Harissa or other hot pepper, (to taste)
  • 3 TBS olive oil
  • 125g (half packet) Tortellini pasta of your choice (I used 3 cheese)


    SAUTE the onion and garlic in a large sauce pot in the olive oil until golden, 2 minutes. Sprinkle in the flour and stir to make a roux. 

    ADD in the passata, water, garlic, harissa, herbs, and spices. Bring to a boil, add the tortellini then reduce to a low fire. Cook with the lid askew for about 10 minutes until the pasta is al-dente, or cooked to your liking. 

    Ladle into bowls and serve with side salad and/or toasted garlic bread, freshly baked bread with your choice.



    Storage
    This soup can be stored in the fridge for up to 3 days or frozen up to one month. To use, place in a saucepot and slowly bring up to temperature.

    DIY Spice Blend
    If you don't have the spice blend Ras el Hanout at home you can easily make your own version by combining 1 teaspoon of ground cumin, ground ginger, turmeric, salt, ¾ tspsugar, black pepper, ½  tsp ground cinnamon, ground coriander, cayenne, ground allspice, ground fennel and ¼ tsp ground cloves. This will make 3 tablespoon, use only 1 tsp. Store the rest in a spice jar for later.
