Riz au Lait et au Chocolat | Chocolate Rice Pudding

Rice pudding is one of those things that takes you back to your childhood, back to those good ol' sweet memories at your grandma's house. My grandma, my "mama" was and still is the best cook/baker around. It's from her I got my passion for cooking and baking.  She used to make some very delicious and elaborant Hungarian dishes and several Italian ones too, but it was 3 very simple kid-friendly dishes "palacsinta" (crepes), "tejde dara" (semolina porrdige) and tejbe rizs (rice pudding) which was and still are my all-time favorites. 

Rice pudding is one of those childhood treats that we as adults have tried to modernize and adulterate with so many fancy twists on this classic. Don't get me wrong I love recreating classics but something the original is the best!

Here's my Mama's chocolate rice pudding, so delicious guaranteed to become a favorite for you too! :D

Riz au lait et au chocolat | Chocolate Rice Pudding}

 crealy rich chocolatey rice pudding solves i think all problems and boo-boos! 

YIELD: serves 4-6 
ACTIVE PREP TIME: 10-15 mins 
INACTIVE PREP TIME: 0mins
COOK TIME: 30-35 mins


grater, wooden spoon, heavy bottom pot and serving glasses , 

۞ = SUBSTITUTIONS




FOR THE PUDDING
  • 1 liter of whole milk (this is important)
  • ½ cup - 120g long grain white rice
  • ¼ cup - 60g granulated sugar (or to taste)
  • 1 tsp vanilla essence
  • pinch of salt
  • 1 TBS real butter
  • 3½ - 100g - half tablet of good quality dark chocolate ۞

FOR THE DECORATION
  • shaved dark or milk chocolate (optional)
  • cooked pears or apples (optional)
  • spoonful of Nutella (optional)
  • chocolate chips (optional)
  • raspberries (optional)
  • strawberries (optional)
  • créme chantilly - whipped cream (optional)


    HEAT the milk in a heavy bottom pan on a low fire. Don't scold!

    ADD the rice (without washing, but making sure no debris is in with the rice) to the pot. Add the sugar and vanilla also. Cover half-way with a lid and simmer on low fire for 45 minutes. Remember to stire constantly so the bottom doesn't burn.

    ONCE the rice is tender and still creamy add grate the chocolate and add into the rice pudding. Stir until the chocolate is melted and well incorporated into the rice pudding.

    SPOON into youur serving glasses and allow to cool slightly before serving 

    Serving this rice pudding in glasses is nice way to make this comfy dessert even more fancy, topped with chocolate, fruits, chccolate chips, chantilly cream and any of your favorite toppings.


    Storage
    This rice pudding will keep in the fridge for a few days, but will soak up the milk and become "dry". You'll need to add more liquid to make it creamy again. 

    Subsitition
    You can sub ¼ cup dark cocoa powder for the 100g chocolate here if you like.
