Date Chai Masala Latte

The seasonal shift always brings with it certain cravings. I usually find myself trying to do more DIY at home crafts and baking. Our (summer) morning ritual of having breakfast on the balcony turns quicking running from our beds in our pjs and robes into the warm and toasty kitchen to share a few slices of freshly made bread and jam before starting the day.
Husband and children go off to school and I remain with baby having the luxury of a extra few moments to ourselves before our actual day starts. Baby and Mama get to have our special bonding time together.

During the cold months, my world seems to slow down. I crave richness and warmth. Soups, stews and one pot meals replace the salads and freshness of summer. My intution tells me to reach for more earthy and ayurvedic spices.  The winter season can be harsh and is especially difficult for persons who have weakened immune systems. Teas and herbal drinks can help us flow smoothly in tune with nature. One drink I like to make myself as a treat is masala chai. There's a magical combination of froth, spice, heat, sweetness and fat. 

This frothy concotion is was created in my efforts to be more health conscious and  incorporate more of the Sunnah into our daily lives. 
Just as a side note, dates are really nature’s candy. They're are full of  number of minerals, vitamins, and health-benefiting phytonutrients including calcium, iron, phosphorus, sodium, potassium, magnesium, zinc  and vitamins such as thiamin, riboflavin, niacin, folate, vitamin A and vitamin K.

The dietary fiber in dates helps to move waste smoothly through your colon and helps prevent LDL (bad) cholesterol absorption by binding with substances containing cancer-causing chemicals. The fibre found in dates allows your body to digest it a little slower so your blood sugar doesn’t spike as much as it would with other types of sweeteners.

Chai contains Ayurvedic spices which help with digestion and metabolism, cleanse ama from the body and prevent digestive disorders such as gas and bloating. So you know that's a great added bonus to it's amazing flavor.

So as you can see this is really an amazing drink, not only in taste but nutritional value.

The perfect beverage for breakfast or even afternoon, Date Chai Latte, made with warming Ayurvedic spices

EQUIPMENT
↣↣↣ NOTE 
‣ I have used loose tea leaves in mine but you can certainly use tea bags.

‣ I have used coconut milk in my recipe, you can certainly use cow milk or even another non-dairy milk


‣ 1/3 - 80g date paste
‣ 4 tsp loose black tea leaves - 3 black tea bags
‣ small pinch baking soda
‣ small pinch baking soda
‣ 1 ½ cup - 350ml water
‣ ½ cup - 130 ml milk ( I used homemade coconut milk)
‣ 3 cloves
‣ 6 cardamom pods, crushed
‣ generous pinch of ground ginger
‣ 1 cinnamon stick



  1. In a saucepan, place the water, baking soda, tea, date paste, and spices. 
  2. Bring to a slow boil, then reduce the heat. Alla the tea to seep for about 10 minutes. The baking soda will neutralize the tanins in the tea, so you don't have a bitter tasting tea. 
  3. Stir the mixture, and then add the milk to heat up.
  4. Once the milk is heated through, pour the mixture through a sieve and into your cups.



⇒ To have a frothy latte, take another pot and pour the tea back and forth for a few minutes, until the tea becomes frothy.
    Storage
    Any leftover tea (without the milk) can be placed in the fridge for up to 2weeks. With the milk added, only up to 3days.
