Frite Omelette | Algerian style omelette {FRUGAL RECIPE}

Did you ever prepare a batch of french fries/chips and have a good serving or two uneaten? Or end up with leftover fries on your plate when you go out to eat? Do you toss them into the trash or try to reuse them? It seems like no one likes to eat those stray leftover fries, do they?

 We live in a time where the global economics are requiring people to be more frugal and waste less. Sometimes it takes alot of creativity to find ways to reuse and recycle foods. Some people are more creative then others. The Algerians are ingenius people when it comes to reusing foods. 


 So many of you probably know the Spanish Tortilla de Patatas ... well I present you to its Algerian cousin, the Frite Omelette. One of the most basic and second popular fast food dish here in Algeria after Garantita. You can grab a Frite Omelette Sandwich for a modest price to recharge your battery in the many colourfully named fast food joints like McKiki, McTitus, Les Tropico or Ham-Ham. The Frite Omelette is very simple, fast and frugal way to use your leftover fries/chips. And actually any other leftovers you may be having in the fridge. No special recipe or tools are needed. It can easily feed a single person or a crowd in minutes! How great is that? 


Frite Omelette

 - Algerian omelette with fries/chips
Yield: 1 omelette

Prep Time: 5 minutes (active)  |  Cook Time: 
8-10 minutes

INGREDIENTS:

  • 400g - about 2 generous handful of pre-cooked fries/chips
  • 4-5 eggs, beaten
  • salt/ black pepper, to taste
  • (Optional) Harissa or cayenne
  • about 2 TBS oil or butter
  • (Optional) tomatoes, peppers, cheese, mayo to serve with
METHOD:
  1. Whisk the eggs until they are pale yellow colour.
  2. Season with salt, pepper and hot pepper, if using.
  3. Heat your fry pan on low fire.
  4. Add oil or butter.
  5. Add the fries/chips into the pan, to crisp up.
  6. Then add the eggs.
  7. Now you can pour in the eggs. Don't let the eggs cook for more then 1-2 minutes or until the bottom starts to set.
  8. With a spatula, gently move the mixture around, letting the liquid move to the center.
  9. Now you can flip over the omelette, like you would a pancake. Or you can grate cheese over the top and allow to cook for a few minutes, until the cheese starts to melt.
Serve with mayo, Harissa, tomatoes and olives. I like mine with homemade feta cheese. ;)

۞ Note 1: Optionally you can just crack the eggs into the pan, instead of whisking them beforehand. This is how my husband prefers it. See the picture below.
۞ Note 2: Algerians like their omelettes more brown then their French counterparts.

    MashAllah great way to use leftovers or for a quick snack, whenever I have made one thing of a similar nature my husband has complained as I like my omelette cook through and he prefers it the French way i guess. I will give your recipe a try someday soon inshAllah :)
