Elhamdullah, we're home now. In the place where I feel most protected, humbled and nourished. I'll be spending the Winter Break not only spending more time with my children, starting new projects but doing some mental housecleaning. Enchallah making room for new positive thoughts.
Spending the time I did in Tunisia, it came to me out of the blue there are situations that Allah bestows upon us for a reason only for the betterment of our soul, healthy and status in life. SubhanAllah how it came to me, how beautiful this is.
Sadly, a lot of us, including myself lose sight of this beauty.
There are days I don't feel strong. I don't feel this strength from all the challenges. I feel weak, battered and bruised from it all.
Then HE send some some devine inspiration. Always in the most oddest ways - the crashing waves of the sea I can see from my balcony, the giggle of my children, the bubbles given off by Jude my soughdough stater or quirky chirk of the birds on the window sill.
Beauty is all around.
And we are the product of our own personal jihad. These struggles make us survive and will us to continue on trying in this life, in order to obtain success in the next.
My own personal harships of the last two years lead me through struggles I didn't think I could survive. The loss of a mother, the loss of a child. Oh, how many times I cried in my sujoud. Then it came to me Wallahi, you all suffer in this dounia only because this isn’t ours to keep. None of this is ours.
But Allah hears us. HE knows us.
But holding tightest when its hardest takes us to another level. Urges us to stand up and move on remembering and living our faith. Well, let me tell you, that’s your iman right there. Subhan'Allāh. No one can be given a steady iman, a lot of things can shake it, can affect it, but it’s up to us to keep it firm, to keep it inevitable by heartache.
So speak to your soul, only look at your past to appreciate what you have and are now, do not look at your past and be eaten up by such depression and regret. Whatever that was done was done whatever happened has happened and nothing happens in this dounia without HIS Permission, so just put your heart at ease because we know the one who gives permission is Al Muhaymin, our Guardian, and always remember what HE says;
“Allah intends for you ease and does not intend for you hardship.”
With citrus season upon us, I always think of my eldest dd who's no longer with us. She loved oranges, mandarines and clementines. When they came into season, and there were citrus fruits in the house she'd always go to town on them.
One day just playing around, we invented together a certain cookie which married her two favorite flavors chocolate and orange. She called them 'orange choco glob cookies'. And I'd like to share with you all today.
So let's get started with today's recipe.

‣ 2 eggs
‣ 330g - 1 1/2 cups brown sugar
‣ pinch of baking soda
‣ 1/2 tsp salt
‣ Juice of half an orange
‣ Zest of one orange
‣ 170g- 3/4 cup melted butter
‣ 2tsp vanilla essence
‣ 30g - 1/4 cup cocoa powder
‣ 175g- 1 cup dark chocolate chips or chunks
‣ 325g - 2 1/2 cup flour
- Preheat oven to 350° F -175°C. Stir together the flour, baking soda and salt; set aside.
- In a large bowl, cream together the melted butter, orange juice and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Blend in the dry ingredients including the chocolate, Drop rounded spoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven.
Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Storage
⇝ These cookies will stay fresh on the countertop for up to 5days, if they last them long hehehe. They freeze also, raw dough form or already baked off. To use just thaw out on the countertop.
Variation
⇝ You could add candied orange peel here to kick these cookies up several notches.

⇝ You could make these cookies with vegetable oil or r use a flaxseed "egg" to make it vegan.
