Use leftover and overripe strawberries in this super healthy and refreshing summer smoothie

. With the summer months just upon us, iced tea is a mainstay in my fridge. I always have a pitcher of ice tea ready for anyone thirsty. Much better than store bought juices and sodas, leftover tea cannot only be made into iced tea but also translates easily into a base for a smoothie. I personally like using fresh mint, as it gives just the right hint of cool freshness, much needed on hot days! I find the best tea to use is mint. It gives you a blast of cool freshness on warm days!
I had some strawberries that were just little too ripe that I wanted to use up, so I thought why not a strawberry drink.
‣ 1 liter - 1qt water
‣ tiny pinch of baking soda
‣ 1 TBS gunpowder green tea leaves
‣ 2 generous handful of fresh mint
‣ 2 TBS (or to taste) sugar, honey, Stevia or other sweetener
‣ 1 cup hulled strawberries,
‣ 2 handfuls of ice
‣ juice of half lemon
‣ 1 small 4oz 125g pot of vanilla or plain yoghurt
To serve: fresh mint and whole strawberries
1. Clean and hull the strawberries.
2. Boil your water.
3. In a seperate pot, place the tea leaves, baking soda, sugar and half the mint. Once the water is boiling, pour the water over the leaves, allowing it to seep for about 5 minutes.
4. Strain and allow the tea to cool. As the tea is cooling, squeeze out the lemon juice.
4. Once the tea is completely cooled, place the tea, the other half of the mint, strawberries, ice and yoghurt in a blender. Blend completely.
Storage
⇝ This smoothie best fresh, as the smoothie will seperate.
Variation
⇝ You could use another tea instead of the green tea.
Substitutions
⇝ You can use Moroccan tea bags instead of the tea leaves.
To make this vegan, you can leave out the yoghurt or use coconut yoghurt.
