Espresso Date Smoothie

Today was one of those days. Forgot to set the alarm this last night so we all ended up waking up a weebit late. I was totally rushed to get husband, daughter and son dressed, fed and out the door. Mom (that's me) rushing into hyperspeed mode. Should I just send dear husband off with just a cup of joe? Or make something nutritious risking him being stuck in traffic then being late? 
Well course, knowing me I combined the fast joe with something filling and nutritious, just to shake up breakfast. It's simpler than simple. Better than good. Packed with essential vitamins dear hubs needs for the morning as well as that caffeine jolt that'll keep him on his toes. It's a recipe that came together by accident in a flash ... but boy it turned out so well machAllah delicisous! It's not only an excuse to have dessert for breakfast, but a healthy way to eat dessert for breakfast.

You heard me right! – this Espresso Date Smoothie is healthy! It’s made with some very basic ingredients you already have around the house – few dates, a splash of milk, a sprinkle of hot chocolate powder and a a shot of espresso or strong coffee. I've talked extensively about the benefits of dates here and here. And dates are really something we as Muslims, but I think in general everyone should incorporate into their diet. So What d'yaknow? No added sugar, fat or any of that artificial crap and yet this breakfast still tastes GREAT! Go ahead and give this a delicious and nutritious drink a whirl!

PS: I make smoothies so often I usually have bananas, yogurt in my freezer, but I also pour milk into that rarely ever used ice cube tray to drop into smoothies. You can do do the same here or simply just use regular ice cubes.You can also use previously brewed coffee for this too! Or even that leftover baking dates you still have laying around from last Eid. Great way to recycle leftovers! ;)

{ espresso date smoothie }

 a quick jolt of healthiness in the morning with this espresso and date smoothie. 

YIELD: 2 servings 
ACTIVE PREP TIME: 5 mins 
INACTIVE PREP TIME: 0 mins
COOK TIME: 0 mins

۞ = SUBSTITUTIONS


  • 7 pitted and torn Deglet Nour dates (or to taste) ۞
  • 1 shot ( ¼ cup - 60ml) espresso or strong brewed coffee 
  • 1 cup - 250ml milk of your choice (cow, almond, coconut)
  • 1 TBS cocoa powder
  • 4 milk ice cubes (or regular ice cubes)
  • pinch of salt

    PIT the dates and tear them into more managable size. 

    PLACE all the ingredients in a blender and blend until smooth and frothy.

    POUR into glasses and sprinkle with a little cocoa powder on top.


    Serve this smoothie cold or room temperature. Great when paired with banana or a slice of buttered multi-grained bread or my best-ever banana bread.  

    Storage
    Store this smoothie in the fridge or a thermos for up to one day. 

    Variations
    You can use other varieties of date instead of the Deglet Nour, even baking dates/date paste would work here. Just adjust the amounts to taste. And if you really love coffee and need that extra jolt use 2 shots of espresso or strong brewed coffee.

    Vegan
    To make this smoothie vegan and dairy free, use almond or coconut milk.
